The taste of Italy - Amaretti
Amaretti are a sweet from the Italian region of Liguria. These delicious almond biscuits go very well with a cup of aromatic espresso or a nice glass of fine Marsala. Amaretti are very easy to make with only a few ingredients.
Mix
400 g ground almonds (unpeeled or peeled)
300 g white sugar
100 g white flour
3 yolks
2 bottles of almond extract (e.g. by Dr. Oetker)
in a big bowl. Beat
3 egg whites
2 pinches of salt
until stiff and carefully mix the beaten egg whites with the dough.
Let the dough rest for two to three hours in the fridge. Form little balls with a diameter of approximately 2 cm and roll them in powdered sugar. Place them on a baking tray lined with baking paper and bake for 20 minutes at 170° C in the middle of the preheated oven. Get them out of the oven as soon as they start getting crispy and golden on the outside. Baking them too long will make them hard and dry. Let the amaretti cool down on a baking grid or enjoy them still warm with a nice cup of steaming coffee. Amaretti can be kept for about a week or even longer in a biscuit tin.
