One recipe – Endless cakes

With this easy recipe you can create a variety of different cakes: with fruit, berries, chocolate chips or raisin, with fillings and toppings as you like. This simple sponge cake recipe only requires five ingredients that most will have at home already and is so simple that you can memorize it in less than 30 seconds.

Mix

  • 250 g butter (soft) with

  • 250 g sugar and

  • 1 pinch of salt

Add

  • 4 eggs

and whisk to ribbon stage. Now is the moment to add vanilla sugar or scraped seeds of a vanilla bean, bitter almond aroma or lemon zest, kirsch or sherry. Whatever you like!

Add

  • 250 g white flour

  • 1 tablespoon baking powder

to the batter. Now is the moment to gently fold in chocolate chips (dark, milk or white or all three combined), caramel cubes, blueberries or raisin. I love a combination of caramel cubes and chocolate chips. For a fruit cake, cut the washed and – if you like – peeled fruits in quarters or slices and prettily arrange them on the batter. Sometimes I cannot decide which fruit I use. Then I just mix! I love the combination of pear and plum. They taste great together and are ripe at the same time of the year. Sometimes I have guests who love apple cakes but at the same time others who only eat plum cake, so I place on one half of the cake apples and on the other half plums.

Sponge Cake with tulips

Fill the batter in a spring form pan with a diameter of 26 cm. Bake the cake at 180° C in the pre-heated oven for about 60 minutes. Baking time depends on your oven. My oven is usually faster than the baking times in recipes. Therefore, I shorten the baking time by some minutes. I use a skewer or sharp knife to pinch the cake in the center. If it comes out with batter sticking to it, the cake needs some more minutes in the oven. If it comes out clean, your cake is ready to take out. If the cake bakes too much, it will dry out. Better shorten the baking time in the recipe and test with the skewer.

With this easy sponge cake recipe, you may also bake a juicy lemon cake or transform the simple sponge cake into a creamy cake by slicing it in half and filling it with custard or buttercream. Or just use the bottom, spread it with vanilla cream and top it with fresh berries. To make the cake look nicer, I dust it with some powdered sugar.
