Chocolate Lover’s Dream - The most chocolatey Brownies in the world
Many legends surround the invention of this dense, sweet and gooey chocolate treat: Was it a librarian who forgot to add baking powder to her chocolate cake, or was it actually a housewife who accidentally put too much chocolate in her cookie dough?
A good brownie is moister and denser than a traditional chocolate cake and contains significantly more chocolate. Brownies should be “fudgy”: still somewhat doughy and sticky, with a gooey centre. The batter is often enriched with nuts or chocolate chips, like in this recipe.
Melt
150 g dark chocolate and
125 g butter
together in a bain-marie. Make sure that the water does not boil and neither water nor steam touches the chocolate. The water should only be hot, otherwise the chocolate will get clumpy.
In the meantime, mix
3 eggs
1 package vanilla sugar
200 g brown sugar
to ribbon stage. Add the melted chocolate-butter- mix and mix well. Add now
150 g white flour
1 teaspoon baking powder
1 pinch of salt
1 tablespoon cocoa powder
and mix well. Chop
50 g dark chocolate and
100 to 200 g walnuts
into pieces and add to the brownie-batter.
Spread the batter about 3 cm thick onto a baking tray lined with baking paper. Bake in the oven preheated at 180° C for about 15 minutes. Use a skewer to check if the brownies are done: Insert a skewer, a knitting needle, or a flat, sharp knife into the center of the batter. If only a few small pieces of batter stick to the skewer, the brownies are perfect. They shouldn’t be baked all the way through, like a regular chocolate cake.
Take the tray with the brownies out of the oven, let it cool down a bit and cut in squares. If you like, drizzle a bit of melted chocolate over the brownies, once they are completele cooled down. Enjoy the brownies pure or with some vanilla ice cream!
